Is it Fresh? Local? Sustainable? What’s in my budget? How do I cook it?

Walking up to a seafood counter can be daunting. It can be hard to tell one fillet from another, understand why prices vary from fish to fish, and do those eco-labels actually mean anything?

This workshop will give you the tools and knowledge to find, buy, and prepare sustainable seafood for yourself, family, and friends with confidence. It’s going to be an swift schooling, so batten down the hatches and let’s dive in!

In this 2-hour class, you’ll learn:

THE SCIENCE
– The types of BC fish you’ll encounter at the counter (including ALL the salmon species and their many names)
– What’s in season and how they’re caught
– The journey your fish takes from boat to plate through the supply chain
– How to address traceability and seafood fraud
– Sustainability concerns and actions to help preserve wild fish stocks and ocean health

THE SKILLS
– What to look for (and look out for!) when choosing fish
– How to identify different species
– Questions to ask your fishmonger, and the answers you want to hear!
– Understanding seafood Eco-Labels
– How to work this healthy and sustainable protein into your budget
– Tips and tricks for cooking your favourite BC fish (hint: it’s so much easier than you think!)

THE SNACKS
– Savour a delicious raw and chilled selection of the fish we’ve covered in class!
– Learn how to prepare these simple treats to serve at home
– Q&A on what we’ve learned and a chance to win a FREE space at our next workshop!

Seasonal samples will include Wild Salmon Sashimi, Albacore Tuna Poke, Halibut ceviche and Chilled Snapper Tacos.

This is a fish/seafood workshop. If you have a seafood allergy it is not recommended to attend. This is a seated workshop
Tasting samples will be dairy, gluten and nut free. All will contain fish.
