Part 1: Forest Foraging Excursion
We start the day with a mushroom foraging excursion led by Shaggy Jack, who will take students to a productive mushroom patch featuring a variety of good local wild edible mushroom species.
Part 2: Wild Mushroom Cooking With Chef Benjamin Berwick
After gathering mushrooms, students will return to the kitchen to a wild mushroom cooking demonstration led by chef Benjamin Berwick of Drift Cafe & Bistro in Gibsons. Ben is a skilled forager who frequently uses foraged mushrooms in the dishes served at Drift. Students will be able to sample culinary creations made from the mushrooms they freshly picked.
